So I decided that I will start to post my meals for the day on my blog. I hope you all enjoy them. They are from a great lady Gina. Thanks to her meals I have been able to loose 30 plus pounds. I always have people asking me what are you having today, what's on the menu. So I opted to make a menu for everyone to be able to take a look on here. And maybe just maybe this will help us all who are trying to watch our eating habits by keeping on track. I hope you all enjoy my food reviews of these wonderful bloggers. :)

Mexican Slow Cooked Pork Carnitas

Course: Main Course

Serves: 8

Ingredients

  • 2.5 lb pork shoulder blade roast lean, all fat removed I used Smithfield
  • 6 cloves garlic cut into sliver
  • cumin
  • dry adobo seasoning (I used Goya)
  • garlic powder
  • 3/4 cup 99% fat free chicken broth
  • 2-3 chipotle peppers in adobo sauce (to taste)
  • 2 bay leaves

Directions

  1. I know a lot of you share my love for Mexican food, so I think you will agree this is the most amazing pork recipe for the crock pot. Coming home from work and smelling this when you walk in the door is heavenly.
  2. Browning the pork first is essential so don't skip this step. Pork shoulder is very inexpensive and you can make a few meals out of this. Be sure to buy the boneless pork shoulder blade roast, as it is leaner than the pork shoulder picnic. The prep for this is about 15 minutes the night before. Get it ready and refrigerate it so you simply take it out and plug it in when you get up. Serve this with tortillas, use in burritos, or simply have this with cilantro lime rice. You can make your own Chipotles burrito bowl with lettuce, sour cream, corn salsa, guacamole, or whatever else you usually put in yours!

  10. Season pork with salt and pepper. In a medium sauté pan on medium-high heat, brown pork on all sides for about 10 minutes. Remove from heat and allow to cool.
  11. Using a sharp knife, insert blade into pork, cutting small holes and insert garlic slivers. Season pork generously with cumin, adobo and garlic powder all over.
  12. Pour chicken broth in the crockpot, add bay leaves and chipotle peppers. Place pork in crock pot and cover. Cook low for 8 hours. After 8 hours, shred pork using two forks and combine well with the juices that accumalated at the bottom. Remove bay leaves and adjust salt and cumin (you will probably need to add more). Let it cook another 15-30 minutes.

Girls Graduation..

These are pictures of my babies graduating Kindergarten. I can't believe that they are this big. How time flies!! I have now an 11th grader and 2 first graders. My babies are all grown up.










Friends forever ...

Being a military family is never easy. You have your good and your bad just life everything that comes with life. I hate that my children have had to endure this already. My son has been one tough cookie. He has had experience with it from the beginning and at the age of 16 he is a pro and already knows you lose friends and make new ones but it is never easy. And it has come time for the girls  to endure that part of being military brats. These are pictures of the girls with their little best friends. Bella in the middle has just recently PCS'd with her family to Washington State. We will miss them dearly. We are planning to do family trips together but will they ever be fulfilled is yet to be seen.
Segan is their little buddy and he will also be leaving us back here in Hawaii while him and his family move on to South Carolina. It's funny how we will have friends spread out all over the country. One on the West Coast and one on the East Coast while we will be leaving to San Anotnio, TX. But I do believe that we will see each other one day again...even if it's on skype. :)

This is the girls at the airport while waiting for daddy to get off the airplane. And of course what else would make it perfect but having some Starbucks. They had no clue what we was doing there. It was a big surprise. Anthony told them we were at the new Target so I just went along with it and one of Atiana's comments was she did not like the new Target...lol.



This is as they see their daddy coming through the doors they are running to him. They are so happy to finally see him again.



As they reach to give daddy a big hug. This just melts my heart every time I see it.



Atiana did not want to let go of him for a second.

Wow...

a lot has happened since I last posted which was back in February. My husband came home on R&R had a great time with him while we could. The girls were super excited for him to be back but once he left it was the saddest thing I had to endure all over again. It was most upsetting for the youngest one of the twins, Atiana. She really broke down and that was really heart breaking for me as a mother. It was even hard on my husband this time around to leave them all over again. But on the bright side we have only 4 or 5 months left before he is finally back at home for good (or until a next deployment).

Then came the girls kinder graduation sad George was not here to see this but I took lots of pictures for him and video of the girls. 
Now the girls are on summer vacation and we are just hanging around till it's time for George to get home and then it will be time to get ready to PCS out of here and to our new destination SAN ANTONIO, TX.
I was not to excited to be moving there as for it's not close to my mother in law but when I saw how much house we can get for our money that totally changed my mind and now I am super excited. We have been stationed there before and so I already know the area and have friends that live there. I get to have my real Mexican food that I so miss. And this is one place that I know my mom will fly out to because she says it reminds her of home (California) that is another plus about San Antonio. Well I think that is it for now and if I remember anything else I will post more. I will also upload a few picture links to each event that I just spoke about but in their own post.
